A healthy fun snack

Day 2


I feel that a well balanced snack, or meal comes from the ingredients that you use to make them with. One of my goals in life is to always buy from local farmers as much as you can to support the small farms. Always try to bake your vegetables, or eat the raw. To boil a vegetable is to kill the nutrients.

One of my readers asked for a great healthy snack idea. Her lovely baby lives on mac'n cheese, veggie burgers and yogurt! I love her!

I feel that she may love the silky taste of cheese. and the Sweet flavor of the yogurt. And for the veggie burger, she really loves the veggies, but she hates to see them in front of her in their real form before she takes a bite.

lets try this.

you will need:

1 Sweet potato, baked until its soft
1/4 cup of any type of cheese shredded
3 peaces of broccoli fresh, chopped up fine
1 carrot chopped up fine

bake sweet potato till soft, until you can smash it. In a bowl add the cheese, broccoli, carrots, and smashed hot baked potato. Mix all together and taste. It may need a little salt.

This could have the sweet taste of yogurt, the chewiness of the veggie burger, and the cheese taste of the mac and cheese. You can be creative, have your kids dip celery stick into it, or even dab a spoon full on to a rice cracker. Be creative

A well balance snack or meal made up of real healthy veggies. With all the nutrients that kids need to grow up healthy and smart ! LOL

Day 1

I am a 28 young gay male.
Life for me has been a roller coster. As many of you have probably experienced the wild side of life, drugs and rock and roll. LOL
This month I completed the Advanced communication, The Power to Create. (Land Mark Forum) I was left touched, moved and inspired. I would ask you guys to take a look at the Landmark Forum courses, they have changed my life. :)
What can I do different this new year, that would make my life worth saying I did all I wanted to do. This is something that has been on my mind ever since completing this course. I am not sure if being 28 has something to do with it, or is it that i am now open to new possibilities? After watching Julie and Julia, I was left wanting to cook the stew that she cooked for the reporter. Having gone to cooking school my self, I felt that I could take this on. My friend and I went to the HOPE farmers market in Austin, bought all the ingredients that we could buy from local farmers and started our journey with Julia. WOW the recipe was really long and some how confusing if you have never been to culinary school. I am not putting Julia Childs down at all, but man!!!

Something That I have always wanted to do is write recipe for the normal young professionals. LOL many of us never have the time to cook for more that 2 hours at a time.
I am going to take this on and add a challenge free recipe on my blog daily. i would love for you guys to let me know how it turned out for you, what did you think, did it come out tasting great, or did it actually turn out!

Just to let you know, all the recipes on this blog are my own though out stress free recipes! Just as an FYI


Recipe # 1

Garlic Vinaigrette
6 garlic cloves
1 cup of sweet onion chopped
1/4 cup of lime juice
1/2 cup of cilantro chopped
3/4 cup of virgin olive oil
salt
This is very simple and can be made in 3 minutes or less.

You will need a food processor or a blender to combine everything.
1. Place in food processor, the garlic, chopped onions, lime juice, cilantro, virgin olive oil, and a pinch of salt. 
2. Pulse the food processor till all ingredients are all mixed together.
3. Taste the vinaigrette and if you want to add more salt, well go ahead. 
You can even add different fruits into the mix; try blueberries, raspberries, or mango, even papaya.
 

Let me know what you think and please do not be afraid of the garlic, the longer you leave it in your fridge, the lime juice will cook it.
